Red cabbage, roast potatoes and pigs in blankets hash

This is a fantastic dish using up any of your leftover Christmas ingredients and it’s super tasty too! Topped with a fried egg and a generous amount of siracha, I guarantee it’ll satisfy the masses (great for any over indulgence as well!)

As a veggie alternative, use some nut roast in places of the pigs in blankets and as vegan alternative remove the eggs.

Serves: 4

Ingredients

  • 15g unsalted butter
  • 300g leftover cooked red cabbage
  • 400g leftover roast potatoes – roughly chopped
  • 300g leftover pigs in blankets
  • 4 fried eggs to serve
  • 2 tbsp of olive oil
  • 1 tbsp of thyme leaves

Method

Warm the oil in a pan and add in the cooked red cabbage, thyme, cooked potatoes and the pigs in blankets, crushing some of the potatoes with the back of a spoon. Season and cook for 5-6 minutes. Once the mixture is piping hot, serve with a fried egg and a little dijon mustard, if liked.
