Seasonal Cauliflower and Bacon Bake

Whilst we are used to having any ingredient we want at any time of the year, I personally love to try and cook as seasonally as possible. With it being March, many people presume there is a shortage of great seasonal ingredients- but this time of year actually has some wonderful ingredients to offer!

The below recipe makes the most of cauliflower for a tasty seasonal bake. You can of course add more vegetables to this if you want with leeks, cabbage and kale all in season too.

Ingredients

Serves: 4

  • 1 Cauliflower cut into florets
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 3 tbsp plain flour
  • 100ml milk
  • 50g cream cheese
  • 100g grated cheddar
  • Salt and pepper
  • 4 slices bacon, cooked and crumbled
  • 30g sliced spring onions

Method

  1. Preheat your oven to 180°.
  2. In a large pot of salted boiling water, blanch cauliflower for 3 minutes.
  3. Once pale, remove the cauliflower from the heat. Drain and serve into a baking dish.
  4. To make the cheese sauce heat a saucepan and melt the butter. Once melted, add the flour and stir until golden. Add the milk to the saucepan and bring to a low simmer, whisking continuously to avoid lumps. Then add cream cheese and whisk this in until it has combined. Remove from heat and stir in the grated cheddar until melted (save a small sprinkle of cheese for topping). Then season with salt and pepper.
  5. Pour the cheese sauce over the cauliflower and stir until combined.
  6. Mix in the cooked bacon and spring onions until combined, then top with any remaining cheddar, bacon, and spring onions. 
  7. Bake until cauliflower is tender and cheese is melty (around 30 minutes).
