Buddha Bowls

These little beauties are a wonderful lunchtime treat, they can be as healthy as you please, totally friendly to dietary requirements and boy do they look beautiful – a glorious rainbow in a bowl!

The definition of the Buddha bowl and where it may originate from presents a balanced meal, where balance is a key Buddhist concept, from the story of the Buddha carrying his food bowl to fill it with whatever bits of vegetarian food villagers would offer him.

I love the idea of humble eating in this way (but maybe not so elegantly!).

Ingredients

  • 3 tablespoons Gourmet red and white quinoa
  • 2 tablespoons houmous
  • 1/2 carrot, grated
  • 1/2 courgette, grated
  • 1/2 avocado, sliced
  • 2 tablespoons tinned kidney beans
  • Handful of watercress
  • 2 tablespoons tinned sweetcorn
  • 2 radishes, chopped

Method

Arrange all the ingredients above (and any other favourites you may like to throw in) in a lovely arrangement, we do eat with our eyes after all!

This is brilliant for getting ready for the week ahead – just have a selection of ingredients ready and vary your Buddha bowls for the next coming days.
